Chinese white tea - completely different from the English black tea with milk!

If you like your tea white with one sugar, you will be confused when served Chinese white tea ?it will come as a clear liquid with no trace of milk! I have compiled some information about white tea to help to initiate you.

White tea is one of the six main categories of Chinese teas.

Origins and manufacture: White tea originated from the Fu Ding area in Fu Jian province, southern China and has been produced for close on a millennium.

There is a tea plant unique to this area called u Ding Da Bai Cha?(Fu Ding big white tea). Its leaves are strong with a needle shaped tip when unfolded and are covered by small white fur.

White tea is one of the least processed teas. Its manufacturing process is generally divided into two steps: ithering?and ehydrating? ?ithering?is highly depend on the weather at the time and may be conducted indoors or out in the sun. The result is a leaf that is no longer risp? Yellowed or odd shaped leaves, stems etc are removed at this stage. ?ehydrating?is a process involving application of medium grade heat to remove 95% of the water content. White Tea production, unlike other tea categories involves no aking? ubbing?or haping?procedures.

White tea is therefore one of the most lightly processed teas, minimising oxidization and enzyme breakdown. White tea leaves maintain their original white fur covering - which augments the flavour.

White teas are in fact lightly fermented. ( ie claims made that white tea is unfermented are strictly not true)

White teas have been traditionally used in Chinese culture as being food and medicine. Studies have shown it increases the lipoproteinlipase activity in the human body to increase the metabolism rate and decrease the energy intake from food. Other health benefits include: reduced body cholesterol level; cancer preventive; detoxifying; anti-inflammatory; and prevent heat stroke. It also has a high level of Vitamin A.

Preparation: If available use a teapot made of clear glass, or a drinking glass (heat resistant of course) to allow watch the leaves unfold: 1.Warm the vessel by washing with boiled water. 2.Place 1/2 tea spoon of the tea leaves per cup. 3.Add boiled water and leave (don put a lid on whilst brewing) for 3-5 minutes before serving. 4.Up to 4 repeated infusions are possibly simply by adding hot water.

Flavoured White teas: These are usually made of inferior quality teas. The additives are used to mask this lower quality or staleness.( note : when tea becomes oxidized, it results in a bitter taste. Additional flavors such as lemon, spices flower or fruit are then added to overcome this bitterness).

Flavoured white teas have the following additional disadvantages: 1.the original delicate flavor is covered and there can't be appreciated. 2.the additives used are generally cheaper than the white tea, diluting its price and value.

We recommend trying a  quality white tea .?without milk (or other additives) of course! EnJie is the owner of Valley Green Tea : a site promoting premium grade Chinese tea. Her passion involves sharing the enjoyment and culture associated with authentic Chinese tea. En Jie grew up in the Fujian Province of China where  white tea  is produced. She has the contacts and background to both source quality Chinese tea and provide comment on the related history, health and cultural aspects.

Trip to the Maojian Tea Plantation

One of my friend came to China for a visit. I told him when he came to Guilin I would guide him around and introduce him some new teas and take him to a tea plantation. He and his girlfriend spent seven days with me and we had a blast digging through my tea vault for teas he had never tried, and spending hours in my tea shops sipping teas.

One day of the visit, I took him to the Maojian Tea Plantation in Guilin. I often visit the plantation for a stroll. As I have mentioned in previous blogs, it is a fantastic way to spend an afternoon and it always ends up with a tea tasting.

My friend, his girlfriend, and I strolled through the tea fields, taking photos, and watching the tea pickers work their magic. The tea pickers were elderly and one of the couple's grandson was playing next to the fields. He had captured a beautiful iridescent but and had tied a string on it. This is a very traditional toy in China for countryside children. Sometimes they capture butterflies, small birds, dragonflies, or lizards and tie a string on it. The children love watching the insects and birds fly and it keeps them busy so the grandparents can work the fields.

The plantation was germinating new tea seedlings and we got to see how they do it. The tea seeds have to be planted almost immediately upon maturing, or they will either rot, or dry out. Either way, they will not germinate then. They are placed in the soil and the soil is kept damp and black plastic is kept above them to keep the sun from drying them out or overheating them. Once the trees are large enough, they are thinned and then finally, planted. It takes many years for a tree to mature enough to be picked, so they have to be planned well in advance.

We then visited the visitor center where my friend and his girlfriend saw how the freshly picked leaves were fried, shaped, and dried. Afterwards, we chatted with the workers for a while before being invited to play volleyball with them. We had a blast playing and nobody kept score. It was just for fun. It was a fantastic day and one I plan to repeat often.

Green Tea, Black Tea & Oolong Tea Increase Insulin Activity by More than 1500%

Increasing insulin activity is vital for those suffering from diabetes, but making sure one's insulin is working properly should be important to anyone interested in health.

Insulin is a hormone released by the pancreas when blood glucose levels rise. The purpose is to keep blood glucose in a normal range. It is insulin's job to tell the body's cells to take up glucose from the blood so that the levels return to normal.

In type 1 diabetes, the pancreas is no longer able to produce insulin. This causes higher blood glucose levels and eventually death, unless the missing insulin is replaced through injections or other methods.

In type 2 diabetes, the pancreas produces insulin, but normal insulin levels are inadequate to cause the cells to take up glucose from blood. This is known as insulin resistance, which can result in health problems ranging from coronary artery disease to blindness. One known cause of insulin resistance is obesity.

One way to keep insulin working properly is drinking tea. Black, green and oolong teas resulted in more than 15-fold increases in insulin activity.

The figure above shows that when added insulin was present, insulin activity was higher. However, when added insulin was absent, insulin potentiation was greatest. This means that when there was no added insulin, tea had the greatest effect on the activity of insulin.

As the strength of the tea increased, so did the insulin-enhancing activity, up to a point; the highest amount of tea leaves shows more activity than the lowest amount but less activity than the middle amounts.

The authors note that the most active components were epigallocatechin gallate (EGCg), followed by tannins, epicatechin gallate and theaflavins. EGCg was more than three times as effective as tannins and epicatechin gallate. Caffeine and catechin showed no activity.

When milk was added to the tea, insulin potentiation was decreased. One teaspoon (5 grams) of milk decreased activity by 33%, while 50 grams of milk decreased the activity by more than 90%. Both whole milk and skimmed milk had the same negative effect, as did nondairy creamers and soy milk. Lemon juice, on the other hand, had no effect.

Herbal teas, instant teas and iced teas showed no increases in insulin activity.

The authors mention that other studies have shown that when humans are given tea catechins prior to eating starch, the elevation of insulin is suppressed. So how can tea both increase insulin activity and suppress insulin levels? According to the authors, a possible explanation is that because tea increases the activity of insulin, less insulin is needed to get the same results as before. That is, when tea is present, the pancreas makes less insulin but the insulin does its job better.

So if you're drinking tea to keep your insulin levels and blood sugar in order, or to help with weight loss, drink your tea straight up or with lemon juice, but skip the milk. That's bad news for all the chai latte aficionados out there, but good news for those who get their camellia sinensison old school style.
